An evening to remember in Saundersfoot

If anyone out there thinks the Really Wild Dining Club is Pembrokeshire’s answer to ‘I’m a Celebrity...’ please think again!

What a treat last night was!

St Brides Spa Hotel was a fabulous location, especially for those of us who took advantage of Andrew and Lindsey’s great offer on accommodation and use of the Spa facilities!!

As we have said before, the seasons, locations, chefs and available wild ingredients make each Really Wild Dining Club meal a unique experience and last night was no exception.

Andrew introduced us to Craig Evans a couple of weeks ago whom we quickly realised has the most passionate and knowledgeable interest in wild foods and foraging along the coastline.

He gathered all the wonderful ingredients with the help of his brother (who commented during the evening that he never wanted to see another oyster! Well! Some of us would be very happy to take them off his hands should he be collecting more in the future!) In fact one lucky dining club member went home with a dozen oysters for his wife which he won in the raffle, the proceeds of which went to the Marine Conservation Society (www.mcsuk.org).

Toby Goodwin, St. Brides’ chef, then put these wild offerings together to make a meal that celebrated the coastal location of the hotel & the variety of fresh sea foods that can be found in the local waters and pools.

The first course was a Rockpool feast which looked beautiful on the dish, giving us some wonderful flavours and new taste experiences. The main course was a fragrant fish stew, followed by a windfall apple tart. Craig talked us through the courses as they were served telling us about the ingredients and where they had been gathered.
